Mango on a Stick
Prep time: 30 minutes
Ingredients:
• Mango
• Lime
• Chili powder
• Salt
• Chopsticks
Steps to Prepare:
1. This is a traditional Mexican treat that’s ridiculously easy to make and tastes delicious and refreshing. It also looks fancy when you’re done, so it’s a great way to impress the family. First, take a chopstick and push it carefully into the bottom of your mango.
2. Peel the mango.
3. Begin to make some cuts in the mango’s flesh at a downward, turning angle, almost to the pit but not quite. Spin the mango as you go, and gently bend the flesh away from the mango as you cut, like flower petals, so that eventually you’ve made cuts all the way around. It should look like a flower. Don’t worry if it’s not perfect the first time! It’s the fun that matters, and it will always taste good no matter what.
4. Squeeze on some lime juice and sprinkle a bit of chili powder.
Agua Fresca de Pepino
Prep time: 5 minutes
Ingredients:
• 5 cups water
• 3 cucumbers (peeled & sliced)
• ½ cup freshly squeezed lime juice
• 2 tbsp sugar
Steps to Prepare:
1. This Mexican-style cucumber limeade is the best drink for a day in Rocky Point and requires hardly any work. Mix together all these ingredients and throw them together in a blender.
2. Blend until smooth. Then, pour the limeade into a pitcher and store in the fridge to enjoy at your leisure!
Sopapillas – The Best Mexican Dessert
Prep time: 30 minutes
Cook time: 15 minutes
Ingredients:
• 4 cups all-purpose flour
• 2 tsp baking powder
• 1 tsp salt
• 4 tbsp shortening
• Oil (the type is up to you)
• Honey
Steps to Prepare:
1. Stir together the flour, baking powder, salt, and shortening. Mix well. Then, stir in the water and mix it up until the batter is smooth.
2. Cover and set aside for 20 minutes.
3. Scatter some flour onto a board or the counter and roll the dough out until it’s about ¼ inches thick. Then cut it up into squares (roughly 3 inches each).
4. Heat oil to 375°F and fry up the squares! You know they’re done when they turn a beautiful golden brown in color.
5. Eat them hot and serve with honey!
