Even though you are choosing a less traditional fall escape, the season would not be the same without the taste of pumpkin, and our fully equipped kitchens will make it easy to prepare a sweet breakfast of pumpkin pancakes. 1 ¼ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup milk
½ cup pumpkin puree
1 egg, beaten
1 tablespoon vegetable oil
Sift together the dry ingredients and whisk together the wet ingredients (minus the vegetable oil; that’s for oiling the pan) Drop the batter in large dollops onto the oiled griddle or pan, flipping halfway through cooking, and serve immediately to your hungry family! Whipped Cream on top adds a decadent treat, but regular maple syrup and butter tastes just as great!
