Pumpkin Pancakes for Breakfast

Even though you are choosing a less traditional fall escape, the season would not be the same without the taste of pumpkin, and our fully equipped kitchens will make it easy to prepare a sweet breakfast of pumpkin pancakes. You may want to plan ahead for this recipe (listed below) in case pureed pumpkin cannot be found in the local grocery stores.

FMI Rentals Panqueques de Calabaza

1 ¼ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup milk
½ cup pumpkin puree
1 egg, beaten
1 tablespoon vegetable oil

Sift together the dry ingredients and whisk together the wet ingredients (minus the vegetable oil; that’s for oiling the pan) Drop the batter in large dollops onto the oiled griddle or pan, flipping halfway through cooking, and serve immediately to your hungry family! Whipped Cream on top adds a decadent treat, but regular maple syrup and butter tastes just as great!

Take a Hike

Fall in Rocky Point can still be rather warm, so this is not the vacation for you if you are hoping to spy some colorful autumn trees and with temperatures still reaching the low 90s in October, you may want to change your thoughts of a hike to a walk along the shore’s edge! If you get too warm, you can run out into the surf and cool down, before continuing your stroll. Old Port is the heart of Rocky Point Fun. The area stretches along the shore of the Sea of Cortez and is lined with restaurants and stores providing hours of entertainment.
